The Boucherie Trolliet story begins in 1970, when Maurice Trolliet, passionate about meat since childhood, took over a butcher's shop in Villeurbanne with his wife Marie-Claude. Relentless work and an unwavering commitment to quality bore fruit: in 1986, Maurice was crowned Meilleur Ouvrier de France, the highest distinction in the trade, awarded by the State and the masters of the profession.
In 1989, the house settled in the heart of Les Halles de Lyon Paul Bocuse, the temple of Lyonnais gastronomy, and has never given up its place since. Over the decades, the craft has been passed down from father to son: Alexis joined his father after an exemplary apprenticeship, while Laurence took charge of hospitality and the running of the house in 2009.
Today, Maurice, Alexis, Laurence and their team share their love of exceptional meats with private customers and the greatest restaurateurs alike. Limousin beef, lamb, Périgord veal, Cantal pork, Bresse poultry, seasonal game and house-made charcuterie: every product is selected with a rigour inherited from half a century of expertise.
Beneath the glass roof of Les Halles, the Trolliet stall remains one of the finest food houses in Lyon, the keeper of a living tradition where excellence is forever conjugated in the present tense.
