Born in 1938 when Alphonse Merle took over the “Huîtres et Coquillages” house of the former Halles des Cordeliers, Maison Merle established itself over the decades as Lyon's benchmark for fine oysters. Alongside his father, Alain Merle carried the craft to its highest level: crowned French oyster-shucking champion in 1971, he made the name respected far beyond the neighbourhood.
In 2005, the house passed into the hands of the Lameloise family, to whom we also owe the celebrated Brasserie Georges, perpetuating a tradition of exacting standards and Lyonnaise hospitality. Today set in the heart of Les Halles de Lyon Paul Bocuse, Maison Merle remains one of the emblematic figures among the oystermen still present beneath the market hall.
At the stall, you choose from more than fifteen varieties of oysters and shellfish, selected from the finest producers. Seafood platters to share around a table, a quick tasting at the counter or takeaway: Maison Merle extends the art of living of Les Halles, where Lyonnaise gastronomy meets the open sea.
