La maison
An emblematic figure of Les Halles de Lyon Paul Bocuse, Maison Pupier has brought the taste of the sea to the heart of the city since 1947. Its stall has become a landmark for Lyon's residents and chefs alike: Paul Bocuse himself came here to choose his fish. Since the 1960s, the house has established itself as one of Lyon's benchmarks for seafood, celebrated for its uncompromising freshness and the quality of its service.
After an eventful history, the fishmonger has regained all its lustre under new leadership that has brought together genuine expertise: a Meilleur Ouvrier de France fishmonger and shucker watches over the stall, the guardian of a craft passed on with passion. The house favours French small-boat fishing and rigorous traceability, faithful to the spirit of the Halles.
Sole, turbot, red mullet and sea bass arrive straight from the fish merchants of La Turballe and Vendée, rounded out by fish from the lakes of Savoie and superb shellfish. Oysters selected from small oyster farmers, mussels, Breton langoustines and lobster make up a stall renewed every day according to the catch. On request, the team prepares and trims the fish, and offers a tasting area to savour the sea on the go, at the very heart of Lyon's temple of gastronomy.
