La maison
Founded in 1906 by Fernand Rousseau in the heart of the former Halles des Cordeliers, Maison Rousseau has been a companion to Lyon's lovers of seafood for more than a century. In 1971, the house joined Les Halles de Lyon Paul Bocuse on cours Lafayette, where it stands today as one of the most emblematic addresses of the gourmet market.
Across four generations, Maison Rousseau has remained devoted to a single commitment: the quality of its produce and excellence of service. Since 2001, Jean-Louis and Alexandra Lemmens have carried on this tradition with passion, perpetuating the oyster-shucker's craft while keeping the family spirit of the house alive.
At the oyster bar, you choose your oysters and shellfish to take away or to savour on the spot, seated facing the shuckers whose precise gestures are a pleasure to watch. The house thus brings together a shellfish trade and a table of the sea, in the lively atmosphere of Les Halles Paul Bocuse, celebrating in 2026 its one hundred and twentieth year.
